Introducing Ochazuke, a light and simple Japanese dish! It consists of fish, boiled rice and tea (or soup), and is a light meal that is usually eaten after drinking alcohol or as an evening meal. It’s absolutely delicious - here’s how to make it.
Ingredients
1 tablespoon of cooking sake
1.3 tablespoons of soy sauce
1 tablespoon of sweet sake
Green Shiso (Japanese basil)
Bonito soup stock
2 tablespoon of sesame paste
A small amount of powdered green tea
Sliced sea bream, the amount is your choice
Rice
Method
1. Boil the rice in a pan.
2. Meanwhile, mix the cooking sake, soy sauce, sweet sake and green tea to make a sauce.
3. Pickle the sliced sea bream in the sauce and keep it in the fridge for 30 minutes. If you pickle overnight, it will be even more delicious.
4. Put 600ml of water and bonito soup stock in a pan and boil to make bonito soup.
5. Put the pickled sliced sea bream on boiled rice and add some green tea powder.
6. Pour the piping hot bonito soup on the pickled sliced bream to make it half raw.
7. Enjoy with your favourite topping, such as green Shiso (Japanese basil), wasabi, roasted sesame and shredded nori or seaweed.
